Some of you may have heard rumours about a curious new range of wines from Castelli. Well, it’s true – ‘Empirica’ is a new, experimental, small batch range of wines which we will release yearly.
Em-pir-ic – derived from experiment and observation alone, without using scientific method or theory.
The range and wine styles may change from year to year. It’s a chance for our winemakers to show us what they can do, using only exceptional parcels of fruit that have performed well that vintage.
This year we have a Fume Blanc (Barrel fermented Sauvy), a worked style of Pinot Gris, a seriously funky Gewurztraminer, and a joven style Tempranillo.
The wines are pouring in Perths top restaurants including Print Hall, Amuse, Rockpool, Duende, Steves, Frasers, Balthazar & Co-Op, to name a few.
