Our second vintage of Empirica Uno from the home Estate property. The uniqueness of this block (high altitude, slow ripening and low yielding) has allowed for a powerfully structured yet beautifully elegant wine. Full solids partial barrel fermentation allows for perfect oak integration and complex flavours to complement to highly aromatic “pinosity” of the fruit. The tannins are super fine and support the abundant fruit sweetness. We feel confident that the wine can be cellared for at least 10 years. Being unfined and unfiltered they may be a harmless, naturally occurring deposit develop over time – so decanting would be recommended.

The 2018 was as close to perfect as we have ever seen in Western Australia. Good winter rains and mild early Spring weather allowed the vines to establish healthy canopies and well balanced fruit loads. The mild/sunny weather continued with little in the way of extremes allowing for minimal disease pressure and even ripening and flavour development. A near perfect Autumn enabled picking to occur at optimum flavour and sugar development. We are expecting great things from this vintage.
The fruit was sourced from 30yr old grafted Pinot clones 114 and 115. Handpicked and chilled overnight to prevent oxidation and retain flavour. Approximately 40% whole-bunch inclusion in a small 2T open fermenter. Hand plunged twice daily and pressed after seven days on the skins – roughly halfway through ferment which was completed in new French oak hogshead following regular batonage and aged on full yeast solids. Unfined and unfiltered (only natural settling).
