This wine is true to the essence of the Pinot Gris style with aromatics of honeyed pear with a real savoury nougat character. The barrel fermentation of pressings gives a lovely texture to the palate and avoids the ‘oily’ nature of its European counterparts. Made in a dry style, the savoury nature wine is ideally suited to a wide variety of rich dishes, antipasti & french cuisine.

The 2021 season posed some challenges with rain in early February followed by unseasonably cool temperatures delaying the start of the white harvest, although slowing everything down and allowing the flavour to develop was the benefit in the end.
The rain and cooler temperatures gave reds a much-needed drink, allowed colour to intensify and the following warmer finish allowed them to maximise flavour expression.
In the end, vintage 2021 started late, finished early and across the board quality very, very good!
The fruit was harvested in the cool of night to preserve fruit intensity and minimal delay in processing time. The softest press portion was fermented in stainless steel tank with the pressings portion fermented in old oak barrels as this aids the wine’s complexity and texture and softens the phenolic grip the Pinot Gris skin tannins have. We used wild yeast to bring complexity and texture to the variety.
