Tightly focused Riesling provides a limey, citrus core for the full, rich flavours of individual sub-regions of the Great Southern where each plays a role in bringing different characters to the overall wine. The lifted floral and rose petal aromas (essence of Mt Barker)and with talcy acidity and textural mid-palate weight (Frankland River). There are some very attractive nuances of perfumed stonefruit and crushed wildflowers.

The 2021 season posed some challenges with rain in early February followed by unseasonably cool temperatures delaying the start of the white harvest, although slowing everything down and allowing flavour to develop was the benefit in the end.
The rain and cooler temperatures gave reds a much-needed drink, allowed colour to intensify and the following warmer finish allowed them to maximise flavour expression.
In the end, vintage 2021 started late, finished early and across the board quality very, very good!
The fruit was harvested in the cool of night to preserve fruit intensity and minimal delay in processing time. Some pre-pressing cold maceration occurred to maximise mid-palate texture. Early separation of free run and pressings allowed for the delicacy of the variety to be preserved and minimise phenolics. Cool fermentation in insulated tanks at 12-14°C. Fermentation ceased at approx 26g/L of residual sweetness when the acid/sugar balance was at its optimum.
