The colour of this wine is pale straw. Intense fruity aromas of golden apples with elegant floral touches of acacia and wisteria dominate the nose. The perlage is persistent as is the apple and white peaches flavours. Lively acidity. Perfect match for delicate aromatic herbs marinated fish dishes or as an aperitif.

Non-vintage is more accurately described as a multi-vintage blend. Rather than look for the expressions of multiple vintages the blend aims to bring out the best out of each one, this allows the winemakers to keep a house style from year to year. The Sum Brut is the result of a collaboration between Castelli Estate and Cantine Vedova.
Fruit was harvested in the cool of the night to prevent oxidation and retain flavour then wholebunch pressed. After cold settling, the juice is fermented at 12-14 degrees C in stainless steel with selected yeast strains. The base wine is blended before the second fermentation in pressurised tanks resulting in a fine persistent bead.
